In this course I try to unite Asian and European food traditions.Also I can use it, as part of Aroma Aurora Borealis food trend, when smoking it with Finnish alder chips. For smoking you need a small cast-iron pot with a steel strainer or something heat resisting where to put the tofu piece.In the bottom strew the wooden chips and heat the pot till it starts to give smoke. Place then the tofu on an aluminium paper and rub it well with Spanish Virgen Extra olive oil and sprinkling a little bit salt on it and smoke it (10-15min.) till it has gained a faint yellow color. Serve it with sugar marinated (4hours) very thin slices of peeled fresh ginger, and a tiny flake of gourmet salt. If you want to be trendy, serve it of course with Finnish arctic bramble liqueur (Lignell&Piispanen Mesimarja Likööri).
Now you have it; a taste with all the Northern Lights colors.
