This meal was served at Finca Sofia 11.11.11 during a work party.
Ingredients:
-fresh pork meat (kassler) 1 kg
-virgin extra olive oil from Culebron 30ml
-black pepper, paprika powder
-2 cloves of garlic
-salt
First rub the meat well with olive oil. Put it on a aluminium paper and spread on both side pepper and paprika.When you close the wrap, add last the crushed cloves and enough salt for your taste.
Put it on a plate and fry it in oven about 1 1/2 hour (160 C)
When the meat has cooled down, cut into 1cm thick slices. If there is liquid left in the bottom of the aluminium, use it to make Finnish forest mushroom sauce.
This hot sauce you use to serve with the meat.To prepare it you can use f.ex these typical wild mushrooms:chantarelles, craterellus,black trumpet,cep and even matsutake if you have been lucky to find it.
