Ingredients:
1 kg fresh cleaned vendace
rape seed oil, rye flour, salt, pepper and 1 lemon
Mix rye flour, salt and pepper in a 3 liters plastic bag. Dip the vendaces in the bag and wave the bag till all fish is covered with the flour. Fry on a hot pan with rape seed oil.When crispy ,press some lemon juice above them.Serve with thin barley bread from Kuusamo and churned butter.
P.S. Vendace is a small to salmon family belonging fish , typical in Finnish lakes.Ohrarieska is a thin from barley made soft bread, which you can use also as a wrapper.
