JUNGLE BUNNY SALAD

I have given this name after my good friend,late Peter Wilcox  from Somerset.His favourite food  was Chicken and Chips and Jungle Bunny Salad was not amongst them . To make this salad here in Spain is a "bunny" thing.
You need to know the wild plants. The basic ingredients are : Wild rucula; leaves (Eruca vesicaria), Wild garlic ;shoots,young (Allium sativum/ophioscordon),Wild rosemary; flowers, Sun flower; seeds, roasted and for seasoning: salt flakes, balsamic vinegar and enough Virgin Extra Olive oil.
I repeat: First Rucula and Garlic chopped,then add  just collected rosemary flowers and fresh roasted sunflower seeds,pour enough oil above all this and last the salt flakes. Finish the salad spraying a little bit vinegar from Modena.
All these herbs you can collect gratis and  fresh from the fields near Murcia between January and February, so knowing is surviving.
