Emilia Amanda's Mussels Flambe'

I made this receipt  in honor for my first grand child Emilia  who was born in Joensuu Finland 19.1.2011.
The burning Spanish Brandy symbolize new life and the mussels female baby.
The ingredients you need are following:
-frozen mussels without shell 400g
-fresh celery minced 50g
-fresh leek (a la Juliana ) 50g, olive oil (Virgen Extra) 1 dl, 1 table-spoon full of butter,lot of fresh dill and basil
 Spanish Brandy for flambe'.
First you cook celery and leek in olive oil till they become soft and give liquid on the pan. Next add the mussels and some salt and cook slowly 10 minutes with the vegetables.Then add the butter and 3 table-spoon full Brandy to the mixture and turn it and light it with lighter turning it while burning.When the flames sets down  add lot of minced dill and basil . Can be served with buttered bread with garlic and Spanish White Wine (semi dulce)
